Simple answer - yes - all characters will be able to buy the skill to use a one-handed weapon.
Long answer - wait a bit longer for the rulebook and then the implications and scope of choice will become clear.

| its a question of kit. weather we should get some as a group. It would be nice if we could get our kit made over the winter. Knowing what kit to buy/make is important.

I appreciate what you're saying but in this instance short of 'leaking' large chunks of the rulebook it's not easy to cover off. The primary Greek weapons are spear and javelin. If you want to use a sword as well/instead of then you will be able to - but it's all about trade-offs.

So pretty much decent length sword = no spear
Spear = short sword only
that kind of thing ?
do greeks have bows? or is that a little too leaky?

I'm just going to say one more thing on this - then try my best to ignore the thread 
Any champion from any nation will be able to choose to use any weapon. The archetypes, as shown in the cultural previews, offer bargain bundles of skills as an alternative to picking individual skills. So if you like the combination in the bundle - take that; if you don't - choose your skills individually from the full list - no skill is restricted by nation.
The details of the bundles are in the rulebook. You can probably make some assumptions based on the art in the previews and on the trading cards.
